As delicious as butter is, it has the reputation of not being the healthiest thing to spread on toast. Oil-based spreads like margarine are often considered a heart-smart alternative, but they aren't necessarily good for you. Food scientists at Cornell University have come up with what could be the ultimate butter substitute. According to Gizmodo, the new condiment, which is not yet available in stores consists of 80% water. A typical pat of butter weighs in at 84% fat, 16% water, 11 grams of fat and almost 100 calories. The newly developed water butter has just 2.8 grams of fat, 25.2 calories and It looks and feels like softened butter.
